What Emmy Bakes: Blueberry and Apple Eggless Loaf

In between applying for jobs so that I can progress in my Charity Legal career and preparing for my last exam I still find that I have a lack of structure in my life. This has enabled my nurturing side to fully unleash itself and boy I am not complaining about it!!

Over the past few weeks, I have cooked numerous dishes and yummy treats.

After a few too many compliments and words of encouragement I decided I shall try and blog more about the what I make.

Blueberry and apple eggless loaf

The recipe is so simple and all in all it took around 45 minutes to bake and 20 minutes to prep.

I measure in cups.

Ingredients:

1/2 cup of oil

1 cup of soy milk

2 cups of plain flour

1tsp of baking powder

1tsp of bicarbonate soda

1 large cooking apple

5 generous tsp of 100% blueberry jam – feel free to add real blueberries

1 1/2 cup of brown sugar

Pre heat the over to 180 degrees

Grease pan you are planning to place the loaf in by spreading a small amount of cooking oil around it

Mix sugar and oil in mixing bowl, then add chopped apples and blueberry jam

Afterwards add flour, baking powder, bicarbonate soda

Slowly mix the milk, oil and vanilla essence to the mixture

Place the mixture into the greased pan and place in the oven

Bake for 40 to 45 minutes and dip a knife or something similar to check that no the mixture has fully baked

Once baked leave the cake to cool for half an hour before eating and sharing with friends!
